Cristina is shy at first, in her words quiet, but as soon as she really sees you, she puts you in your place with a sincere smile and a look of determination that sweeps everything away.

She studied architecture in Lisbon, but her extraordinary passion for cooking led her to leave everything behind and pursue her dream with the drive that only geniuses have. As she herself says “cooking made me happier”.

For her, cooking and architecture have many things in common: “As an architect, you look for beauty and the perfect balance between materials and textures. In the kitchen, materials are the ingredients and textures conquer your palate.”

Flavour harmony is something you learn, dish by dish, over time, and that’s where the alchemy and magic of a chef’s work really lies.

It wasn’t easy for her to gain her first opportunity in a kitchen. She had no experience, but her passion and tenacity opened the doors of the Vynil restaurant in Lisbon to her. This was thanks to chef Claudio Martin, for whom Cristina feels gratitude and devotion.

Cristina arrived in Madrid only a few months ago, in July 2022. Club Allard’s offer caught her by surprise at her home in Madeira when she was thinking of pursuing her own project there; but this kind of opportunity comes once in a lifetime and she was not going to let it slip away.

She speaks highly of the project, of Spain and of Madrid, and feels very grateful for the welcome she has received from the city and its people. She can’t wait to give that affection back in the form of an exquisite culinary proposal that takes shape in the form of something spectacular.

Her cuisine is honest and minimalist. She avoids excessively handling the raw material. Her aim is not for her dishes to overpower the flavours of the ingredients themselves, but rather to wrap them up and accompany them in the most subtle and respectful way.
She is inspired by many things in her creative process: books, paintings, landscapes, trees… She loves to experiment, but she doesn’t need to taste flavours, she feels them in her heart and in her head. All she does is adjusting the proportion of each flavour until she finds the perfect harmony.

We could say that she has an “absolute palate”, the equivalent of the absolute ear of musical geniuses but brought to the world of haute cuisine.

Cristina’s professional career includes her awards as the second best chef in Portugal (2020), as well as the Creativity Award and the Best Pairing Award at the Chef of the Year Awards.
